Coffee Grind Size Guide: The Simple Way to a Better Cup at Home

You bought good beans. You use clean, filtered water. You follow the recipe. And still the cup tastes flat, sour, or harshly bitter. Before you blame the beans, look at the one variable most people never touch: grind size.

This coffee grind size guide gives you the simple version. Which grind for which brew method, how to read what is in your cup, and how to adjust in small steps until it tastes the way specialty coffee should. You've got this.

Why Grind Size Matters So Much

Brewing is extraction: water pulls flavour out of the coffee. Grind size controls how fast that happens. Finer coffee has more surface area, so water extracts it quickly. Coarser coffee extracts slowly.

Think of sugar and sugar cubes in a glass of tea. Granulated sugar dissolves in seconds, a cube takes much longer. Coffee works the same way. If the grind is too coarse for your method, water passes through before it extracts enough, and you get a sour, thin, watery cup (under-extraction). If the grind is too fine, water pulls out too much, and you get a bitter, dry, harsh cup (over-extraction).

The goal is balance: sweetness, acidity, and body working together. Grind size is how you get there.

Contact time decides the grind

The rule is simple: the longer the water stays in contact with the coffee, the coarser the grind should be. An espresso shot is done in about 30 seconds, so it needs a fine grind. A cold brew steeps for 12 hours or more, so it needs a very coarse one.

The Grind Size Chart: Method by Method

Espresso: fine

Think of table salt, a little finer than sand. Espresso pushes water through under pressure in around 25 to 30 seconds, so the coffee needs to resist the flow. This is the least forgiving grind of all. Tiny changes make a big difference in the cup.

Moka pot: medium-fine

Slightly coarser than espresso, closer to fine sand. Too fine and the pot chokes and tastes burnt. Too coarse and the result is weak.

V60 and pour over: medium-fine to medium

Think of sand at the beach. The V60 is where grind size is easiest to taste. Aim for a total brew time of about 2:30 to 3:00 for a single cup. Our full V60 guide walks through the recipe.

AeroPress: medium-fine

Flexible, but start near V60 territory and adjust with your steep time. A shorter steep wants a finer grind, a longer steep wants it slightly coarser.

Drip machine: medium

Closer to sea salt than sand. Most home machines are tuned for this range.

French press: coarse

Think of coarse sea salt or breadcrumbs. The coffee steeps for around four minutes and the metal filter lets fine particles through, so a coarse grind keeps the cup clean instead of muddy and bitter.

Cold brew: extra coarse

The chunkiest grind of all, steeped 12 to 18 hours. Go too fine and cold brew turns cloudy and bitter. This is the best way to enjoy specialty coffee through a Saudi summer.

How to Fix Your Cup: Taste First, Then Adjust

You do not need special equipment to dial in your grind. You need your tongue and a little patience.

If your coffee tastes sour, sharp, or thin

The coffee is under-extracted. Grind finer. Water is moving through too quickly and leaving the sweetness behind.

If your coffee tastes bitter, dry, or hollow

The coffee is over-extracted. Grind coarser. Water is staying too long and pulling out the harsh compounds.

The one-click rule

Change only one thing at a time, and change it by a small amount: one click on your grinder, not five. Brew, taste, note it down. Two or three tries is usually all it takes to find your sweet spot for a given bean.

Burr vs Blade: The Grinder Question

If you take one piece of equipment advice from us, make it this: use a burr grinder.

A blade grinder chops beans at random. You get a mix of powder and boulders in the same batch. The powder over-extracts and turns bitter while the boulders under-extract and taste sour, so you get both flaws in one cup. No amount of recipe tuning fixes that.

A burr grinder crushes beans between two surfaces set at a fixed distance, giving you a far more even grind. Even an entry-level hand grinder gives a noticeable step up in the cup. For many home brewers it is a better upgrade than a fancier kettle or a more expensive brewer.

Grind Fresh, Every Time

Coffee starts losing aroma within minutes of grinding, because grinding exposes far more surface area to air. Whole beans stay fresher for much longer, so grind right before you brew and keep the rest as whole beans. If you want to go deeper, read our guide on how to store coffee beans.

Does Roast Level Change the Grind?

A little, yes. Light roasts are denser and harder to extract, so they often taste best with a slightly finer grind and hotter water. Darker roasts are more brittle and extract easily, so a slightly coarser grind keeps them from turning bitter. Treat our grind chart as a starting point, then trust your taste.

لماذا درجة الطحن مهمة إلى هذا الحد؟

التحضير في الحقيقة عملية استخلاص: الماء يسحب النكهات من القهوة. ودرجة الطحن هي التي تتحكم في سرعة هذا الاستخلاص. القهوة الناعمة مساحة سطحها أكبر فيستخلصها الماء بسرعة، والقهوة الخشنة تُستخلص ببطء.

تخيّل السكر الناعم ومكعبات السكر في كوب الشاي. السكر الناعم يذوب في ثوانٍ، والمكعب يحتاج وقتًا أطول. القهوة تتصرف بالطريقة نفسها. إذا كانت الطحنة أخشن مما تحتاجه الطريقة، يمر الماء بسرعة قبل أن يستخلص ما يكفي، فيخرج فنجان حامض وخفيف وأقرب للماء (استخلاص ناقص). وإذا كانت أنعم من اللازم، يسحب الماء أكثر من اللازم، فيخرج فنجان مرّ وجاف وقاسٍ (استخلاص زائد).

الهدف هو التوازن: حلاوة وحموضة وجسم يعملون معًا. ودرجة الطحن هي طريقك إلى هذا التوازن.

مدة التلامس تحدد الطحنة

القاعدة بسيطة: كلما طالت مدة بقاء الماء مع القهوة، وجب أن تكون الطحنة أخشن. شوت الإسبريسو ينتهي في نحو ٣٠ ثانية، فيحتاج طحنة ناعمة. أما الكولد برو فينقع ١٢ ساعة أو أكثر، فيحتاج طحنة خشنة جدًا.

جدول درجات الطحن حسب طريقة التحضير

الإسبريسو: ناعمة

مثل ملح الطعام، وأنعم قليلًا من الرمل. الإسبريسو يدفع الماء بضغط عالٍ خلال ٢٥ إلى ٣٠ ثانية تقريبًا، لذلك لا بد أن تقاوم القهوة تدفق الماء. هذه أقل الطحنات تسامحًا، وأي تغيير بسيط يظهر بوضوح في الفنجان.

موكا بوت: ناعمة إلى متوسطة

أخشن قليلًا من الإسبريسو، قريبة من الرمل الناعم. إذا كانت أنعم من اللازم يختنق الإبريق ويحترق الطعم، وإذا كانت أخشن يخرج الفنجان ضعيفًا.

V60 والقهوة المقطّرة: متوسطة إلى ناعمة

تشبه رمل الشاطئ. الـ V60 أسهل طريقة تتذوق فيها أثر الطحن. استهدف وقت تحضير إجمالي بين دقيقتين ونصف وثلاث دقائق للكوب الواحد.

الإيروبرس: متوسطة إلى ناعمة

مرن في الاستخدام. ابدأ من قرب طحنة الـ V60 وعدّل حسب مدة النقع: نقع أقصر يحتاج طحنة أنعم، ونقع أطول يحتاج طحنة أخشن قليلًا.

آلة القهوة المقطّرة: متوسطة

أقرب إلى الملح الخشن منها إلى الرمل. أغلب الآلات المنزلية مضبوطة على هذا المدى.

الفرنش برس: خشنة

مثل الملح البحري الخشن أو فتات الخبز. تنقع القهوة نحو أربع دقائق، والفلتر المعدني يسمح بمرور الجزيئات الدقيقة، لذلك الطحنة الخشنة تحافظ على صفاء الفنجان وتمنع المرارة والعكارة.

الكولد برو: خشنة جدًا

أخشن طحنة على الإطلاق، مع نقع من ١٢ إلى ١٨ ساعة. إذا طحنتها ناعمة يصبح الكولد برو معكّرًا ومرًّا. وهي أفضل طريقة تستمتع فيها بالقهوة المختصة في صيف السعودية.

كيف تصلح فنجانك: تذوّق أولًا ثم عدّل

ما تحتاج معدات خاصة لضبط الطحنة. تحتاج لسانك وشوية صبر.

إذا كان طعم قهوتك حامضًا أو حادًا أو خفيفًا

القهوة مستخلصة بشكل ناقص. اطحن أنعم. الماء يمر بسرعة ويترك الحلاوة وراءه.

إذا كان طعم قهوتك مرًّا أو جافًا أو فارغًا

القهوة مستخلصة بشكل زائد. اطحن أخشن. الماء يبقى وقتًا طويلًا ويسحب المركبات القاسية.

قاعدة النقرة الواحدة

غيّر عاملًا واحدًا فقط في كل مرة، وبمقدار صغير: نقرة واحدة في المطحنة، لا خمس نقرات. حضّر، تذوّق، ودوّن ملاحظتك. غالبًا تكفي محاولتان أو ثلاث لتجد النقطة المثالية لكل نوع حبوب.

المطحنة ذات الشفرات أم ذات الأسنان؟

إذا أخذت نصيحة واحدة عن المعدات، فاجعلها هذه: استخدم مطحنة بالأسنان (Burr).

المطحنة ذات الشفرات تقطّع الحبوب عشوائيًا، فتحصل على مزيج من البودرة والقطع الكبيرة في الدفعة نفسها. البودرة تُستخلص زيادة فتصبح مرّة، والقطع الكبيرة تُستخلص ناقصًا فتصبح حامضة، فتجتمع العيوب كلها في فنجان واحد. ولا يصلح ذلك أي تعديل في الوصفة.

أما مطحنة الأسنان فتكسر الحبوب بين سطحين بمسافة ثابتة فتعطيك طحنة أكثر تجانسًا. حتى المطحنة اليدوية الاقتصادية تحسّن الفنجان بشكل واضح، وهي للكثير من محبي القهوة المنزلية ترقية أفضل من غلاية أغلى أو أداة تحضير أحدث.

اطحن طازجًا في كل مرة

القهوة تبدأ بفقدان رائحتها خلال دقائق من الطحن، لأن الطحن يعرّض مساحة أكبر بكثير للهواء. الحبوب الكاملة تبقى طازجة وقتًا أطول، فاطحن قبل التحضير مباشرة واحتفظ ببقية الكمية حبوبًا كاملة.

ما عندك مطحنة في البيت بعد؟ عند طلب الحبوب من باتش، أخبرنا بطريقة تحضيرك ونطحنها لك على مقاسها، سواء V60 أو فرنش برس أو إسبريسو. التحميص الطازج نصف القصة، والطحن الصحيح هو النصف الآخر.

هل تغيّر درجة التحميص الطحنة؟

نعم، قليلًا. التحميص الفاتح أكثر كثافة وأصعب استخلاصًا، لذلك يعطي غالبًا أفضل نتيجة مع طحنة أنعم قليلًا وماء أسخن. أما التحميص الداكن فهو أكثر هشاشة ويُستخلص بسهولة، فطحنة أخشن قليلًا تمنع المرارة. اعتبر الجدول نقطة بداية، ثم اعتمد على ذوقك.
